Sweet Potato Pikelets

Gluten Free Dairy Free Nut Free Vegetarian

Perfect for kids of all ages – from school kids to babies eight  months and up. These sweet potato pikelets are loaded with vitamins and minerals and are naturally sweet, the addition of chia seeds means they also contain omega-3s, calcium and magnesium. Make a batch for breakfast, as a lunch box filler, or for a perfect afternoon snack.



4 eggs
½ banana
300g sweet potato, steamed or roasted
1 tbsp chia seeds
½ -1 tsp cinnamon
Coconut oil for frying
Himalayan sea salt (optional)
1. Place all ingredients in food processor and process until a smooth consistency is reached.
2. Heat your fry pan to medium heat. Melt your coconut oil.
3. Turn heat to low. Spoon small amounts of your mixture into the pan – small pikelets are better for small hands!
4. Cook for approx 5–7 mins on the first side. Flip over and cook for approximately 4 mins on other side.

You can serve with any of the following: ricotta cheese, coconut cream or coconut sugar and cinnamon.
